I'm on the level where I first get Hardin and he's doing great, but so are Kain and Abel, is it worth it to use 3 social knights? Or should I try to find a weakest link and ditch one?

Even so, you will want to promote your characters at LV 10-13, as they cap at 20 in stats anyway.

Most the early English FE3 players end up using Kain, Abel and Hardain. The reason for this was to do with final chpapter parties* (though you end up with far too many sowrd users thanks to the indoor=dismount rules)
Later on people started to cotton on that Roshe is decent and started using him too.
Matise is generally despised due to being a pain to recruit and the pre-promotes seem unesicary (though IIRC Alan is decent...in book 1, in book 2 hes Jeigan...only worse!).
The point of most classes having way more units than you could possibly use was to do with replacement units in case any had died but also they are there if you want to lopside your party with a specific class.
*-I can try and recall the full list though to be honest quite a few of the units on it are interchangable and so it should be used more as an idea of how many of each class you should have. Personally, I would say 4 should be your very max of any calss but try to run most classes at two of three units.

This is probably one of the reasons why I like FE3, the lopsided characters make interesting playthroughs. As for the original topic. Paladins are a pretty good class in this game, so don't be too afraid to use 3 of them. As stated, in book 1, you can promote relatively early and still be OK, so you don't need to train all of them to 20 first.

When I saw how many characters Akatsuki (FE10) was going to include, I was hoping for something like Monshou, only... smaller ^^;; Yet somehow, even with 72 characters, this game still seems to have more classes--a couple mages, a couple social knights, a couple archers, a couple sword fighters. Which is nice for me, as I like to use random people every play, or sometimes do an all mounted kinda play and stuff like that.

How many indoor levels are there in FE3 Book 1? Are you often gimped by having all your social knights fight on foot?

Also I have a question about weapon levels...how do they work? Like what is a good weapon level to use what weapon types?

Whenever your character gains a level, there's a chance that their weapon level will increase, just like any other stat.
As for how they work. Let's say for example you want to use a weapon that has a weapon level of 7. In order for a character to use that weapon, their weapon level stat has to be 7 or higher. It's not complicated at all.
