Features that I like...

-FE8: The open map system and how you can use overworld maps to gain money and items. Due to the presence of secret shops, players are encouraged to save up for rare items such as stat-ups.
-FE9/10: The auto-promote system when you reach level 21. I've always hated not being able to promote because I lack one item (referring to FE 6-8).
-FE10: Being able to remove a skill and keep the scroll. This allowed me to use Paragon to its fullest extent (although I got lazy and forgot to remove it from a level 20 3rd tier unit).
-FE9/10: Mounted units being able to act and move afterwards. This allowed me to use them more strategically than I could in the GBA FE games.
-FE9/10: Shoving is useful for me because I could now send a foot unit to do something that he/she normally couldn't do because he/she is 1-2 spaces too far.
-FE10: The use of elevation to get to a certain destination and affecting battle statisics. This made things logical and allowed for some further strategy (yes, I do love ledge-hogging with Shinon; fear him).

I seem to recall Thracia having some overiding in it though (stuff like Miranda/Sleuf near bottom of chapter 19) or prehaps I got lucky.

Promotion items not being class specific is a nice thing*. Especilly if you like mono-class playthroughs

*-FE2,5,9-11 basically fall under this.

Dismount for the lulz! I also miss the fatigue system; it prevented players from abusing a few characters and forced variety (to a degree). There are some features in FE that are awesome *IN* theory, but IS just fucks them up (like branched classes and world map).

The thing I miss most when I go back games is shove and smite. I use it at least one or two times every turn. It's great for getting some units right out of the box punching in the first turn, and also for knocking a vulnerable unit out of range without straddling yourself with the hefty rescue reductions. Whenever I go back to FE7 and FE8 I lament seeing an enemy or an opportunity just one spot out of range that could have been fixed with a good shove.

being able to skip through the epilogue dialog is a very lovely addition. definitely makes the game less frustrating then to hafta sit for a half hour just to look at the unit records.

FE8 Overworld. That was a great addition, and though it got criticized, allowed me to level all my characters to their full potential.
I also love FE10's (Haven't played 9 yet) Auto-promote. Made me love the game more, as I didn't need daft items anymore.

Just about everything that was mentioned.  I prefer the base in FE9/10 to the World Map though.

Oh, and I like in FE10 how the Shop has those items that change per chapter.  Just gives me something to look forward to.

My favorite thing in the fire Emblem series would have to be the skills. It was what original pulled me in when I played FE4 and 5. I was happy that it was brought back in 9 and 10 as well.

I like the supports myself.  I rarely bother with stats or anything like that, all I really care about is getting a good story out of the game.  Supports were a great wait to provide some side story the overall quest.

FE9 while lacking such an obvious section of the shop like Amiees 'Bargains'* has some changes per chapter.

For instance Blade weapons are rarely seen in the shop I really should have stocked up on some Iron Blades in my creently unfinished Maniac playthrough.

*-Why did she name the shop so...most the items there make an armies wallet cry

Actually, I sometimes like playing through the game with only a small select party. I wouldn't like being forced to use a certain amount of units because of fatigue.

But then it did offer an extra layer of strategy. Maybe if they made some changes to the system I wouldn't it coming back.

Fatigue was interesting in theory, but in practice anyone who isn't an experienced player like we are ended up getting screwed pretty badly with it (such as having a thief fatigued in a mission with chests or your best unit unavailable during missions like chapter 14). It was a unique addition at the time, but I don't miss it now that it's gone.

I liked the addition of pushing - it lets me have a weaker unit I want to build up attack, get the experience, then get out of dodge without weighing down another unit. I also liked not having to have two units I want to support sit there sticking together like flypaper for however many turns in order to build up support points, then have another turn taken up by activating the support conversation. It was also good to see skills brought back.

I feel so left out since I haven't played the DS version of Fire Emblem. ._.

Like Hinata and others have mentioned before me, the shove option is pretty awesome. It seems incredibly simple, but it made all the difference for me.  For me, that one space difference can be the difference between getting a treasure and missing a treasure because of the other thieves that are around.  It was also useful to help move characters around so that I can level up specific characters.

I also liked the world map that FE8 had.  Being able to go back to a shop or go back to a map helped n00bish me.

Remove/Canto for mounted/flying units is also a great help. After playing FE9/10 for some time, I'm always dissappointed by the fact that you can't do it in FE6/7/8. I mostly get reminded of it when I think up a nice hit-and-run strategy and fail, leaving my unit in the range of hundreds of foes, so to speak >_>

I really liked the support system in FEDS - I really hated putting together units for a hundred turns or whatnot, and the fact that it's in the background makes it seem a little more streamlined. In my opinion, that's the way its supposed to be - in the background, giving little bonuses instead of the thing you have to go out of your way to do.

Also, class swap in FEDS is awesome. I'd like for Intelligent Systems to keep this feature in future games : 3

That reminds me FEDS skip the entire enemy phase (double tap start during it) is going to fun for gamblers out there (I saw gamblers since you don't know what your level ups were, what your weapon durability is or if anyone died for that matter).

You can also skip your animations and movement by doing the same.

And I know what you mean about FE1. I also seem to remember a lack of trade Window and having to pay to store items and take them out of storage. But gaming as a whole has become streamlined since we are more impatient than ever...also the game knows what will happen while with the NES I think it was calculating as it went along.

About the only upside to FE1 is the commando and shooter animations.
