Quick question - on the chapter where Elincia's group are all NPC's - astrid died and Elincia said something about not dying here and whatnot. 

So - if one of her army dies as an NPC - will they still be available later on?

Yes. Anytime a unit is not on your team, be it an Ally or NPC, they will only retreat if defeated. They will also not die if you're fighting Ike or Micaiah's team in Part 3 and you defeat them.

There might be one exception to this rule, but I didn't fully test it out myself. In 3-6 I had Zihark talk to Lethe and he joined the enemy side however I then have my Sothe defeat him. And Zihark said his death quote and dying animation.
